Executive Chef Michael Metzner
Food has always been a passion for Chef Michael Metzner. His favorite class in high school was cooking with Ms. Kane where he determined that he wanted to become a top chef. After high school Michael began his cooking career at Gianni’s Italian Bistro where washing dishes and making sandwiches were his responsibility. Within a short time, Michael worked his way up to cooking on the line. Shortly thereafter, he enrolled at Johnson & Wales University: College of Culinary Arts. Upon graduation, Michael wanted to work at the best restaurant he could find, and he began working gratis (staged) at the critically acclaimed restaurant Nicholas. Michael loved it, and was offered a job as garde manger by Nicholas Harary. Looking for a new challenge, he then took an executive sous chef job for well-known Dennis Foy at the Lawrenceville Inn. After a year, Michael decided that he wanted to expand his culinary exposure and accepted a position in New York City, working for David Santos at Hotel Griffou in Greenwich Village. This position proved to be extremely positive, citing that New Your City is truly the culinary capital of the world. Upon leaving New York, Michael was offered the sous chef job at Restaurant Nicholas by friend and mentor, Nicholas Harary. Back “home” again, Chef Michael continued developing his understanding of what food is and how it should be nurtured from an idea to the plate. Eleven years of experience brings Michael to his first executive chef job here at Giovanni’s in Berkeley Heights, New Jersey, where he is anxiously looking forward to bringing his skills to Giovanni’s Bistro as well as everyone who dines here.
